Essential Ingredients for Your Pulled Pork Enchilada Casserole

Crafting the perfect enchilada casserole starts with quality ingredients. Here’s what you’ll need, along with some tips for choosing the best options:

  • Enchilada Sauce: The heart of any enchilada dish! You can opt for a vibrant homemade red enchilada sauce for an extra layer of freshness and flavor, or choose a high-quality store-bought version for convenience, especially on busy days.
  • Corn Tortillas: Traditionally, corn tortillas are preferred for their authentic flavor and texture in enchiladas. Standard 5.5-6 inch tortillas work perfectly. If using smaller street-taco-sized tortillas, simply use more to ensure full coverage in each layer. While white or yellow corn tortillas are classic, flour tortillas can also be used if you prefer a softer, less structured casserole.
  • Olive Oil: Essential for lightly toasting your tortillas, which prevents them from becoming overly soggy in the casserole. You’ll need just enough to lightly coat your skillet.
  • Pulled Pork: The star protein! For the best results, we highly recommend our slow cooker pulled pork recipe, prepared ahead of time. However, pre-cooked store-bought pulled pork is a fantastic shortcut. For dietary preferences or variety, feel free to substitute with seasoned ground beef, ground turkey, or shredded rotisserie chicken.
  • Taco Seasoning: Elevates the flavor of your pulled pork. Our homemade taco seasoning allows you to control the spice and salt levels, but a good quality store-bought blend is perfectly fine for saving time.
  • Onion: Diced yellow onion is preferred for its balanced sweetness, but white or red onions can also be used to add a slightly different flavor profile. It adds aromatic depth to the pork filling.
  • Cheese: A generous amount of freshly shredded cheese is key to a gooey, delicious casserole. Cheddar cheese or a Mexican cheese blend melts beautifully and provides that classic enchilada richness. Avoid pre-shredded cheese if possible, as it often contains anti-caking agents that affect melt.

Feel free to customize your filling! Incorporate fresh minced garlic for an extra aromatic kick, or a handful of fresh cilantro for brightness. For added texture and a briny note, some enthusiasts enjoy scattering sliced black olives over the top of the casserole before baking.

Step-by-Step Instructions for Your Enchilada Casserole

Follow these simple steps to assemble your incredible Pulled Pork Enchilada Casserole. This recipe is designed to be straightforward, ensuring a delicious outcome every time.

  1. Preheat Your Oven: Begin by preheating your oven to 350 degrees Fahrenheit (175°C). This ensures even cooking from the moment your casserole goes in.
  2. Prepare the Pulled Pork Filling: In a large skillet, combine the shredded pulled pork, diced onions, taco seasoning, and ¼ cup of water. Cook this mixture over medium-high heat for approximately 5 minutes, stirring occasionally, until most of the liquid has evaporated and the pork is well-seasoned and warmed through. Remove from heat and set aside.
  3. A corn tortilla being lightly toasted in a hot skillet with olive oil.
  4. Warm the Tortillas: This crucial step prevents your tortillas from becoming overly soggy. Heat a large skillet over medium-high heat and add a light drizzle of olive oil, just enough to coat the bottom of the pan. Lightly toast each corn tortilla for about 15 seconds per side until it’s pliable and slightly golden. Add more oil as needed to prevent sticking. As you toast them, stack the finished tortillas on a plate.
  5. Assemble the First Layer: Lightly grease an 11×9 inch casserole dish. Pour ¼ cup of the enchilada sauce onto the bottom of the dish and spread evenly. Arrange approximately 6 warmed tortillas over the sauce, ensuring they cover the entire bottom of the dish. (Refer to the note below for guidance on tortilla count). Evenly spread 10 ounces of your seasoned pulled pork over the tortillas. Drizzle ¾ cup of enchilada sauce over the pork, then top with 6 ounces of shredded cheese.
  6. *Quick Tip for Tortillas: The exact number of tortillas needed per layer can vary based on their size. Before adding any ingredients, try laying out your tortillas in the empty casserole dish to determine how many are required for full coverage. You may need to overlap them slightly.

  7. Create the Second Layer: Place another 6 warmed tortillas on top of the first cheese layer. Follow with the remaining 10 ounces of seasoned pulled pork. Drizzle with another ¾ cup of enchilada sauce, and then sprinkle with 6 ounces of shredded cheese.
  8. Top Off Your Casserole: Arrange the final six tortillas over the second cheese layer. Pour the remaining enchilada sauce evenly over these tortillas, ensuring good coverage. Finish by sprinkling the last 4 ounces of shredded cheese on top.
  9. Bake the Casserole: Cover the casserole dish tightly with aluminum foil. Bake in the preheated oven for 30 minutes. After 30 minutes, carefully remove the foil and continue baking for an additional 10 minutes, or until the cheese is bubbling and golden brown.
  10. Serve and Enjoy: Once baked to perfection, remove the casserole from the oven. Let it rest for 5-10 minutes before slicing and serving. This allows the layers to set, making it easier to serve.

Should Enchiladas Have Corn or Flour Tortillas?

While the traditional approach for enchiladas often calls for corn tortillas due to their authentic flavor and ability to hold up well when doused in sauce, our enchilada casserole recipes are versatile enough to accommodate both. Corn tortillas offer a slightly chewier texture and a distinct flavor that many enthusiasts love. However, if you prefer a softer, more pliable texture, flour tortillas make an excellent substitute and are equally delicious in a casserole format. Ultimately, the choice comes down to personal preference and what you have readily available in your pantry. Feel free to experiment and find your favorite!

How Long Do You Bake an Enchilada Casserole?

For this Pulled Pork Enchilada Casserole, you’ll bake it for a total of 40 minutes. The baking process is divided into two key stages to ensure everything cooks through beautifully and the cheese gets perfectly melted and golden. First, bake the casserole covered with aluminum foil for 30 minutes. This helps to steam the tortillas, warm the filling thoroughly, and prevent the cheese from browning too quickly. After this initial bake, remove the foil and continue baking for an additional 10 minutes. This final uncovered bake allows the top layer of cheese to become wonderfully bubbly and achieve that irresistible golden crust.

Do You Have to Cook Corn Tortillas for Enchiladas?

While it’s not strictly mandatory to pre-cook your corn tortillas before assembling enchiladas or an enchilada casserole, it is highly recommended and makes a significant difference in the final texture and quality of your dish. Lightly toasting corn tortillas in a skillet with a little oil achieves a few important things:

  • Prevents Soggy Tortillas: The brief cooking process creates a thin barrier on the tortilla’s surface. This barrier helps prevent the tortillas from absorbing too much enchilada sauce, which can make the casserole overly soggy and fall apart.
  • Enhances Flavor and Texture: Toasting imparts a slightly nutty, toasted flavor and a more pleasant, less gummy texture to the tortillas. They become more pliable and easier to work with, reducing the risk of tearing when layering.
  • Improved Structure: A lightly toasted tortilla holds its shape better within the casserole, contributing to distinct, flavorful layers rather than a mushy consistency.

A quick 15-second toast on each side with a drizzle of olive oil is all it takes to achieve these benefits and elevate your enchilada casserole from good to outstanding.

What Goes Well With Enchilada Casserole?

An enchilada casserole is a meal in itself, but pairing it with the right side dishes and toppings can transform it into a truly memorable feast. Here are some fantastic suggestions to complement your Pulled Pork Enchilada Casserole:

Delicious Toppings:

Enhance each serving by offering a variety of fresh toppings. Consider sprinkling your dish with vibrant diced green onions or fresh diced tomatoes for a burst of color and freshness. A dollop of cool sour cream or a scoop of creamy guacamole can provide a delightful contrast to the rich flavors of the casserole.

Flavorful Salsas and Dips:

No Mexican-inspired meal is complete without chips and salsa! Serve your casserole with a side of crispy tortilla chips alongside a bowl of fresh pico de gallo (salsa fresca), a zesty restaurant-style salsa, a sweet and tangy mango avocado salsa, or a refreshing pineapple salsa.

Hearty Rice Options:

Rice is always a welcome accompaniment that helps soak up all the delicious sauce. Classic Spanish rice is a perfect match, but you could also serve wholesome brown rice or fluffy white rice prepared in an Instant Pot for convenience.

Satisfying Bean Sides:

Beans add protein and fiber, making them an excellent side. Offer a bowl of tender pinto beans, flavorful black beans, or creamy refried beans. For an extra punch, you can even incorporate beans directly into the casserole filling.

The Perfect Drink Pairing:

And to truly cap off a perfect meal, don’t forget a refreshing beverage like our frosty frozen mango margarita. Cheers to a delicious dinner!
