Essential Ingredients for Your Perfect Chicken Fried Steak and Gravy

Crafting the perfect Chicken Fried Steak requires a selection of fresh, high-quality ingredients, divided into two main components: the steak itself and its indispensable companion, the creamy country gravy. Each ingredient plays a vital role in achieving that signature crispy-tender texture and rich flavor profile.

For the Crispy Chicken Fried Steak, you’ll need:

  • Cube Steak: This is the traditional cut for Chicken Fried Steak due to its pre-tenderized nature, which gives it those distinctive indentations. If cube steak isn’t readily available, you can easily substitute it with another inexpensive cut of beef like round steak or top sirloin, which you’ll need to tenderize yourself using a meat mallet until thin and uniform. This step ensures maximum tenderness and helps the breading adhere better.
  • Whole Milk: Crucial for the egg wash, whole milk adds richness and helps create a thicker, more flavorful batter that adheres beautifully to the steak. While lower-fat milk can be used, whole milk truly contributes to the decadent texture of the crust.
  • Large Eggs: The binding agent in our dredging station, eggs are essential for holding the seasoned flour securely onto the beef, ensuring a consistent and crispy coating.
  • All-Purpose Flour: The foundation of our crispy breading. For those following specific dietary restrictions, a keto-friendly or gluten-free flour blend can be substituted, though results may vary slightly in texture.
  • Seasonings: A harmonious blend of kosher salt, freshly ground black pepper, paprika, and a touch of cayenne pepper is key. This combination provides a savory base with a hint of warmth and spice, elevating the flavor of the beef without overpowering it. Feel free to adjust the cayenne to your preferred level of heat.
  • Vegetable Oil: For frying, select an oil with a high smoke point, such as vegetable oil, canola oil, or peanut oil. This ensures that the oil can reach the necessary high temperatures for frying without burning, resulting in a perfectly golden and crisp crust. You’ll need enough to create a shallow frying environment.

For the Velvety Country Gravy, gather these items:

  • Reserved Frying Oil (Grease): This is the secret ingredient for truly authentic country gravy! After frying your steaks, reserving a portion of the seasoned oil from the pan adds unparalleled depth of flavor to your gravy. If you’re making gravy separately or prefer a milder taste, you can use fresh vegetable oil or even butter.
  • All-Purpose Flour: Used to create a roux, which is the essential thickening agent for your gravy. As with the steak, a keto-friendly or gluten-free flour can be used as an alternative.
  • Whole Milk: Provides the creamy base for the gravy. Whole milk is highly recommended for its richness and ability to create a smooth, luscious texture. Lower-fat milk can be used but may result in a thinner gravy.
  • Kosher Salt and Freshly Ground Black Pepper: Simple yet vital seasonings to taste. Adjust to your preference to bring out the best in your savory gravy.

Step-by-Step Guide to Crafting Authentic Chicken Fried Steak and Gravy

Preparing this Southern classic is a straightforward process, broken down into two main parts: frying the steak to golden perfection and whisking up that irresistible creamy gravy. Follow these detailed instructions for a truly satisfying meal.

To Make the Crispy Chicken Fried Steak:

  1. Prepare the Wet Mixture: In a medium-sized bowl, whisk together the whole milk and large eggs until they are thoroughly combined and smooth. This will be your “egg wash” for dredging the steak.
  2. Combine Dry Ingredients: In a separate medium-sized bowl, mix together the all-purpose flour, 1 teaspoon of kosher salt, black pepper, paprika, and cayenne pepper. Whisk well to ensure all seasonings are evenly distributed throughout the flour.
  3. Set Up Your Dredging Station: Arrange your workstation for efficiency. Place the cube steaks on one side, followed by the bowl with the seasoned flour, then the bowl with the egg mixture, and finally, an empty plate or baking sheet for the breaded steaks. Lightly sprinkle the remaining 1 teaspoon of salt over both sides of your cube steaks.
  4. Bread the Steaks for Maximum Crispiness: For each piece of cube steak, begin by dipping it into the seasoned flour, ensuring it’s lightly but completely coated. Gently shake off any excess flour. Next, dip the steak into the egg mixture, allowing any extra liquid to drip off. Finally, return the steak to the seasoned flour for a second coating. This “double-dredging” technique is key to achieving that wonderfully thick, craggy, and extra-crispy crust that Chicken Fried Steak is famous for. Place the fully breaded steaks on the prepared plate and continue with the remaining pieces.
  5. Fry the Steaks to Golden Perfection: Heat a large, heavy-bottomed skillet (cast iron works wonderfully) over medium heat with about ½ cup of vegetable oil. To test if the oil is hot enough, drop a tiny pinch of flour into it; if it sizzles immediately, you’re ready to fry. Carefully add the breaded steaks to the hot oil, being mindful not to overcrowd the pan. You may need to cook the steaks in batches to ensure they fry evenly and become perfectly crisp. Cook each side for approximately 3 to 5 minutes, or until the outer crust is a beautiful medium brown and satisfyingly crisp. Flip once and continue cooking until the meat is thoroughly cooked through.
  6. Drain Excess Oil: As each batch of steaks finishes cooking, transfer them to a plate lined with paper towels. This helps to absorb any excess oil, ensuring your chicken fried steak remains perfectly crispy, not greasy. Keep them warm while you cook any remaining steaks. If needed, add the remaining vegetable oil to the skillet as you move through batches.

To Make the Creamy Country Gravy:

  1. Prepare the Pan and Reserve Oil: Once all the steaks are cooked, carefully remove most of the oil from the skillet. It’s crucial to reserve about ¼ cup of this flavorful, seasoned oil (often called “grease”) in a heat-proof container. This reserved oil will form the base of your incredibly flavorful gravy.
  2. Create the Roux: Return the ¼ cup of reserved oil to the pan and heat it over medium heat. Add the ⅓ cup of all-purpose flour to the hot oil and immediately begin whisking vigorously. This combination of fat and flour creates what is known as a roux, which will thicken your gravy and add a nutty depth of flavor. Continue to whisk constantly for about 2 minutes, or until the roux has turned a light golden brown. Be careful not to burn it!
  3. Whisk in Milk and Season: Slowly pour the 3 cups of whole milk into the roux, whisking continuously to prevent lumps and ensure a smooth consistency. Bring the gravy to a gentle boil, still whisking frequently. Once it starts to thicken, add the ½ teaspoon of kosher salt and ¼ teaspoon of black pepper, or adjust to your taste. Continue to cook and stir for another 5 to 10 minutes, allowing the gravy to simmer until it becomes smooth and reaches your desired thickness. If it’s too thick, add a splash more milk; if too thin, let it simmer a bit longer.
  4. Serve with Pride: Ladle the warm, creamy gravy generously over your freshly cooked Chicken Fried Steaks and serve immediately. Prepare for rave reviews!

Frequently Asked Questions About Chicken Fried Steak

Why is it Called Chicken Fried Steak?

The name “Chicken Fried Steak” comes from the unique cooking method, which directly mimics how fried chicken is typically prepared. It involves dredging a cut of steak through a seasoned flour mixture, then an egg wash, and often a second coating of flour before being pan-fried until it’s hot, golden, and wonderfully crispy. The “fried” refers to the cooking technique, while “chicken” describes the style of breading.

What Cut of Meat is Chicken Fried Steak?

Traditionally, Chicken Fried Steak is made with cube steak. This is a specific cut of beef (often from the round) that has been mechanically tenderized, leaving behind small, cube-shaped indentations across its surface. This tenderization process ensures that even an otherwise tough cut becomes incredibly tender and flavorful when cooked. Its tender nature makes it ideal for frying and achieving that melt-in-your-mouth texture.

What is a Substitute for Cube Steak?

If cube steak isn’t available at your local butcher or grocery store, you have excellent alternatives. An inexpensive cut of meat like round steak (top round or bottom round) or even sirloin tip can be used. The key is to tenderize it yourself; simply place the steak between two sheets of plastic wrap and pound it with a meat mallet or a rolling pin until it’s thin (about ¼ to ½ inch thick) and consistently tender. For a quick and easy option, you can even use ground beef, forming it into thin patties before breading and frying, though the texture will be different from traditional cube steak.

What is the Difference Between Chicken Fried Steak and Country Fried Steak?

Chicken Fried Steak and Country Fried Steak are very similar, and their names are often used interchangeably, particularly in different regions of the South. However, there are a couple of subtle distinctions. Chicken Fried Steak typically features a crispier, more heavily breaded crust and is almost always served with a creamy white gravy, made from a roux of flour and the drippings from the pan, thinned with milk. Country Fried Steak, on the other hand, might have a slightly less crispy breading and is traditionally served with a brown gravy, usually made from pan drippings, flour, and beef broth, sometimes with sautéed onions or mushrooms. Ultimately, the biggest difference often comes down to family traditions and regional preferences. Our recipe follows the classic Chicken Fried Steak style with a rich, white country gravy.

Preparing Chicken Fried Steak Ahead of Time

While Chicken Fried Steak is best enjoyed fresh, hot, and crispy, you can certainly prepare parts of this delicious meal in advance. We highly recommend making the gravy fresh just before serving to ensure its optimal creaminess and temperature. However, the steaks themselves can be cooked and stored for future enjoyment, making meal planning a breeze.

To prepare ahead: Follow the recipe instructions for the steaks, cooking them until perfectly golden and crispy. Once cooked, transfer them to a wire rack to cool completely. Once cooled, store the steaks in an airtight container. They can be refrigerated for up to 3 days or frozen for up to 2 months. When freezing, layer them between parchment paper to prevent sticking. Before reheating frozen steaks, allow them to thaw overnight in the refrigerator.

To reheat: Place the thawed or refrigerated steaks in a large skillet over medium heat with a small amount of fresh vegetable oil. Cook for about 10 minutes, flipping occasionally, until they are heated through and the crust has re-crisped slightly. While the steaks are reheating, you can prepare the fresh batch of country gravy. Serve immediately once hot!
