The Grand Pecan Slab Pie: A Family Favorite for a Crowd
Continuing my theme of making entertaining as seamless as possible, I’m thrilled to share an updated version of one of my family’s most beloved Thanksgiving dessert recipes. Perhaps it’s a unique quirk of my family, but we always find ourselves needing to bake at least two pecan pies for the holidays. And please, don’t misunderstand; these aren’t the *only* pies on our dessert spread. We usually have a decadent chocolate chess pie and perhaps a creamy banana cream pie too. But without fail, the pecan pie is the one everyone eagerly anticipates and demands a slice of. So, two pecan pies become a necessity: one for enjoying right after the Thanksgiving feast, and another for the glorious next day, because who can resist a slice of pecan pie alongside their Thanksgiving leftovers?
This year, I decided to try a slightly different, more efficient, and equally impressive approach: one magnificent pecan slab pie. This method not only saves time and oven space but also makes serving a large group incredibly easy. The process begins by taking two store-bought pie crusts (I love the convenience of pre-made crusts, but feel free to use your cherished homemade recipe if you prefer!) and rolling them out together to create a larger, seamless rectangle. This expanded crust is then gently pressed into a 15″x 10″ jelly roll pan – essentially, a baking sheet with a raised edge, perfect for holding a generous filling.
To ensure a perfectly flaky crust that won’t get soggy under the rich filling, I blind-bake the pie crust first. This crucial step involves pricking the bottom of the dough with a fork, lining it with parchment paper, and filling it with pie weights (or dried beans/rice) before baking for about 20 minutes. While the crust is pre-baking, I prepare a double batch of my grandmother’s legendary pecan pie filling. This recipe, a treasured heirloom, is incredibly rich, sweet, and bursting with flavor. Once the crust is ready, I spread a generous four cups of beautiful pecan halves evenly across the bottom, then pour the luscious filling over them.
To add an extra touch of festive elegance, I take the third pie crust and use small fall leaf-shaped cookie cutters to create delicate decorative accents. These charming leaf cutouts are arranged artfully around the outer edge of the slab pie, transforming it into a true work of art. Before the final bake, both the decorative leaves and the exposed crust edges are brushed with an egg wash (a mixture of one egg and a tablespoon of water) to give them a beautiful golden sheen. The pie then bakes for another 45-60 minutes, or until the filling is perfectly set and no longer jiggles. Not only does this method save me from baking two separate pies, but the resulting Pecan Slab Pie is also breathtakingly beautiful and undeniably delicious!

Ingredients
- 3 Pre-made Pie crusts, (feel free to use your favorite recipe if you prefer to make your own)
- 6 eggs + 1 for egg wash
- 1 ½ c Sugar
- 1 ½ c Light Corn Syrup
- 1 tsp Salt
- 2 tsp Vanilla Extract
- ½ c Butter, melted
- 4 c Pecan halves
- 1 Tbsp water
Instructions

Preheat oven to 350°F.

Remove 3 pie crusts from packaging and let them sit out on the counter for about 15 minutes to come to room temperature.

Stack two of the pie crusts together and use a rolling pin to roll them into a 17″x 12″ rectangle.

Spray a 15″x 10″ jelly roll pan with non-stick spray. Carefully place the rolled out pie crust onto the pan, gently pressing the dough up the sides of the pan to form a rim.

Prick the bottom of the crust all over with a fork. Place a piece of parchment paper over the crust and fill it with pie weights (or dried beans/rice) to prevent the crust from puffing up during baking.

Blind-bake the crust for 20 minutes in the preheated oven.

While the crust bakes, prepare the filling: In a large bowl, whisk together the 6 eggs, sugar, light corn syrup, salt, vanilla extract, and melted butter until well combined.

Take the third piece of pie crust and use small leaf-shaped cookie cutters to cut out decorative leaves. Set aside.

Once the crust has finished blind-baking, remove it from the oven. Carefully remove the parchment paper and pie weights. Evenly spread the 4 cups of pecan halves over the bottom of the crust.

Slowly and gently pour the prepared pecan pie filling over the pecans in the crust.

Arrange the pie dough leaves around the outer edge of the pie, creating a beautiful decorative border. In a small bowl, mix the remaining single egg and 1 Tbsp of water together to create an egg wash. Gently brush the egg wash over the decorative leaves and the exposed edge of the pie crust for a golden finish.

To prevent the crust edges from over-browning or burning, use small strips of aluminum foil to carefully cover them before returning the pie to the oven.

Carefully place the pie in the oven and bake at 325°F for 45-60 minutes, or until the center is set and no longer jiggles when gently shaken.
