The Ultimate Breakfast Burrito Casserole: Your Go-To Recipe for Effortless Holiday Brunch

Delicious layers of Breakfast Burrito Casserole ready to bake

The holiday season is truly a magical time of year, filled with family, friends, and the warmth of shared moments. For me, it means a house buzzing with loved ones, particularly when my sister and her family come to stay for an entire week. These precious days are dedicated to soaking up every laugh, playing with the kids, and of course, those invaluable late-night kitchen chats with my mom and sister, exchanging gossip and holiday cheer.

Feeding a house full of people for a whole week, especially during the holidays, calls for strategic meal planning. My mom and I always start brainstorming recipe ideas and curating our holiday menu well in advance. This year, I proudly claimed responsibility for breakfast – or as it’s more accurately known in our household, brunch. Our family tradition involves staying up late after the kids are tucked into bed, wrapping presents, and catching up. This delightful custom inevitably leads to slow, relaxed mornings, with everyone waking at their own pace and eventually meandering downstairs, eager to discover what culinary delights await them.

And that’s precisely where this incredible Breakfast Burrito Casserole enters the scene as the perfect solution. It’s a dish designed for ease and enjoyment, packed with all the beloved flavors of a classic breakfast burrito, but baked into one convenient, crowd-plepleasing casserole. Imagine tender breakfast sausage, fluffy scrambled eggs, creamy cheeses, and vibrant bell peppers and onions, all layered between the softest Mission®Super Soft Flour Tortillas. This casserole is not only utterly delicious served piping hot straight from the oven but also maintains its wonderful flavor and texture at room temperature, making it ideal for those who prefer to sleep in a little longer during their holiday break.

Why This Breakfast Burrito Casserole is a Holiday Brunch Game-Changer

There’s a universally loved flavor profile in my family: Southwest cuisine. The vibrant, comforting tastes of peppers, onions, and savory meats, perfectly wrapped in a soft tortilla, represent the best of both worlds for us. Combining this love with the undeniable convenience of a breakfast casserole was a stroke of genius. Casseroles are inherently designed to feed a crowd with minimal fuss, making them the ultimate holiday entertaining choice. By transforming everything we adore about a handheld breakfast burrito into a bakeable dish, I’ve created a breakfast casserole that’s both familiar and exciting, and most importantly, incredibly easy to prepare for a large group.

The star of any great burrito, and by extension, this casserole, is undoubtedly the tortilla. For my layered casserole, I exclusively reach for Mission®Super Soft Flour Tortillas. They are, hands down, my absolute favorite tortilla. We keep them stocked in our pantry all year round for quick and easy weeknight dinners. Their incredibly soft, pliable texture is unmatched, and when gently warmed, they truly unlock their full flavor potential, creating the perfect wrap for burritos, tacos, or enchiladas. What’s more, they happen to be the ideal size for an 11″ x 7″ casserole dish, requiring just two tortillas per layer to create a seamless foundation for our delicious fillings.

Speaking of fillings, this casserole boasts a hearty mix of breakfast sausage, decadent cream cheese, sharp cheddar cheese, scrambled eggs, and a colorful medley of bell peppers and onions. This combination delivers a rich, savory, and satisfying experience in every bite. But don’t feel limited by my choices – this recipe is highly adaptable! Feel free to unleash your culinary creativity and incorporate your family’s favorite breakfast items. Think diced potatoes, a hint of spicy jalapeño, or even some black beans for an extra layer of flavor and texture.

Essential Ingredients for Your Breakfast Burrito Casserole

Gathering the right components is key to creating a truly spectacular casserole. Here’s a detailed look at what you’ll need to bring this delightful dish to life:

  • Mission® Super Soft Flour Tortillas: As mentioned, these are non-negotiable for their superior texture and flavor. Look for them in the bread or tortilla aisle at your local grocery store – they’re widely available nationwide. You can easily use their store locator here to find a store near you.
  • Breakfast Sausage: Ground pork breakfast sausage forms the savory backbone of this casserole. You can opt for a mild variety for a classic taste, or elevate the heat by choosing a spicy sausage if your family enjoys a little kick.
  • Eggs: It simply wouldn’t be breakfast without eggs! We whisk ours with a touch of milk to ensure they cook up extra light and fluffy, adding a wonderfully airy texture to the casserole layers.
  • Cheese, glorious cheese: This recipe features a dynamic duo of cheeses. Shredded cheddar cheese provides that classic gooey, savory goodness between the layers and a golden crust on top. Cream cheese, cooked directly with the sausage, melts into a rich, tangy binder that adds incredible depth and creaminess to the meat mixture.
  • Fresh Peppers and Onions: A colorful combination of red and green bell peppers, finely diced and cooked with sweet onions, infuses this Breakfast Burrito Casserole with authentic Southwest flair. For those who crave extra heat, consider adding some finely minced jalapeños to the mix.
  • 11″ x 8″ Casserole Dish: This specific size is perfect for layering the tortillas and fillings. Ensure your dish is at least 2.5 inches deep to accommodate all the delicious layers comfortably.

Beyond this incredible breakfast casserole, Mission®Super Soft Flour Tortillas are wonderfully versatile. I always recommend picking up an extra package! They are perfect for making a big batch of cheesy enchiladas for dinner, or even for getting creative with those inevitable holiday leftovers. Imagine wrapping up leftover turkey and cranberry sauce for a unique post-holiday meal. You can discover even more fantastic recipe ideas and inspiration here.

Step-by-Step Guide: Crafting Your Perfect Breakfast Burrito Casserole

Creating this delicious casserole is surprisingly straightforward. Follow these simple steps for a truly memorable holiday breakfast or brunch.

  1. Preheat your oven to 350 degrees Fahrenheit (175°C).
  2. In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy. Set aside.
  3. Heat a large skillet over medium-high heat and lightly coat it with cooking spray. Add the diced onions and bell peppers, cooking for approximately 5 minutes until they have softened. Transfer the cooked vegetables to a separate bowl and set aside.
  4. Using the same skillet, add a little more cooking spray if needed. Pour in the whisked eggs and scramble them until they are mostly cooked through but still have a slight runniness. This ensures they don’t dry out when baked in the casserole. Set the scrambled eggs aside.
  5. Wipe the skillet clean. Add the ground pork sausage to the skillet and cook over medium-high heat, breaking it up with a spoon, until it is fully browned and cooked through. Drain any excess grease from the pan. Return the cooked sausage to the pan and add the cream cheese. Continue to cook over medium heat, stirring constantly, until the cream cheese is completely melted and smoothly incorporated into the sausage mixture. Set this flavorful mixture aside.
  6. Generously grease an 11×8 inch casserole dish. Place two Mission® Super Soft Flour Tortillas neatly in the bottom of the dish, creating your first layer.
  7. Evenly spread half of the prepared sausage and cream cheese mixture over the tortillas. Follow this with half of the scrambled eggs, then half of the cooked onions and peppers, and finally, sprinkle with one-third of the shredded cheddar cheese.
  8. Carefully place two more tortillas on top of the cheese layer, forming the second tortilla layer. Repeat the filling process: spread the remaining half of the sausage mixture, followed by the remaining half of the eggs, the remaining onions and peppers, and another one-third of the shredded cheese.
  9. For the final layer, top the casserole with the last two flour tortillas. Sprinkle the remaining one-third of shredded cheddar cheese generously over the top.
  10. Bake the casserole in the preheated oven for 30 minutes, or until the cheese on top is beautifully melted and bubbly, and the entire casserole is warmed through to the center.
  11. Remove from the oven, let it rest for a few minutes, and serve immediately. Enjoy your magnificent Breakfast Burrito Casserole!

Tips for the Best Breakfast Burrito Casserole

  • Make-Ahead Magic: This casserole is an ideal make-ahead dish! Assemble the entire casserole (up to step 9) the night before, cover it tightly with plastic wrap, and refrigerate. In the morning, simply remove it from the fridge 30 minutes before baking and then bake as directed. You might need to add an extra 10-15 minutes to the baking time if baking from cold.
  • Customization is Key: Don’t hesitate to personalize your casserole. Add cooked diced potatoes, black beans, corn, or even a sprinkle of chopped cilantro. For extra heat, finely chop a jalapeño or two and add it with the bell peppers.
  • Serving Suggestions: Enhance your casserole experience with toppings! Offer a selection of salsa, guacamole or sliced avocado, sour cream, and extra hot sauce on the side. A fresh fruit salad and strong coffee make perfect accompaniments.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or oven until warmed through.
