This grouper caprese is a simple seafood recipe made with grouper, fresh tomatoes, pesto, and mozzarella. It’s a healthy, low-carb, and gluten-free option perfect for any night of the week.

- 4 Grouper fillets (about 6-8 oz each)
- Salt & Pepper, to taste
- 2 tablespoons Pesto (store-bought or homemade)
- 2 Roma Tomatoes, thinly sliced
- 8 ounces Mozzarella cheese, grated or thinly sliced fresh mozzarella
Instructions
- Preheat your oven to 350°F (175°C).
- Lightly season each grouper fillet with salt and pepper.
- In a lightly oiled pan, pan-fry the grouper fillets for 2 minutes on each side to get a nice sear and slightly crisp exterior.
- Transfer the seared grouper fillets to a baking sheet or an oven-safe casserole dish.
- Evenly spread about 1/2 tablespoon of pesto over the top of each grouper fillet.
- Arrange 3-4 thinly sliced Roma tomato pieces on top of the pesto layer on each fillet.
