This Month’s Star Ingredient: Bacon!
This month, it was our turn to select the star ingredient, and let’s be honest, there was really only one contender that truly captures our hearts and taste buds: BACON! We simply can’t get enough of its smoky, salty, and utterly irresistible flavor. It’s a culinary staple that consistently brings joy to any meal. So, for the second time this week, we’re diving deep into the beloved BLT theme, but with a twist that’s guaranteed to impress. While our previous BLT bites were undeniably delicious and a fantastic party snack, today we’re elevating the concept to a whole new level with these spectacular Bacon Cups! This recipe isn’t just about incredible taste; it’s also wonderfully low-carb and gluten-free, packed with flavor and awesome texture.
The beauty of these BLT Bacon Cups lies not only in their deliciousness but also in their adaptability. They offer a perfect solution for those following specific dietary paths without compromising on flavor or satisfaction. Imagine a world where your favorite sandwich components are perfectly contained within a savory, crispy vessel made entirely of bacon – that’s the magic we’re bringing to your table today. They are a testament to how simple ingredients can be transformed into something truly special with a little creativity and a lot of love for bacon.

Crafting the Perfect Bacon Weave: Your Edible Cup Foundation
The foundation of our incredible BLT Bacon Cups is a perfectly woven bacon cup. This might sound intricate, but it’s surprisingly simple and incredibly rewarding. The key to success is creating a miniature bacon weave that will form the sturdy, yet deliciously crispy, cup. Think of it as edible architecture! To start, grab a regular-sized muffin tin and flip it upside down onto a baking sheet. The inverted muffin cups will serve as your molds, and the baking sheet underneath is crucial for catching all that wonderful bacon grease, ensuring an easier cleanup and perfectly baked bacon. Some folks opt to line their muffin tins with aluminum foil, but from my experience, the cleanup effort remains much the same, so I often skip that extra step for efficiency.
For each individual bacon cup, you will need three strips of bacon. Begin by cutting two of these bacon strips in half. Now, let’s get weaving! Place two of the halved bacon pieces vertically over one of the inverted muffin tin mounds. Next, take the remaining two halved pieces and weave them horizontally through the vertical strips, going under one and over the other. Finally, take your last full-length strip of bacon and wrap it around the outside perimeter of your small weave, expertly tucking it under and over the existing pieces to secure the structure. This weaving process creates a robust and beautiful cup that will hold your BLT filling perfectly. I promise, while it might sound a tad complicated in description, once you get your hands on the bacon, it becomes intuitive and quite enjoyable! For a visual aid, you might even want to check out tutorials on creating bacon weaves, which truly simplify the process.
When arranging your bacon weaves on the muffin tin, it’s a good practice to leave an empty muffin cup in between each bacon cup. This ensures that as the bacon cooks and shrinks slightly, the cups don’t touch each other, allowing for even cooking and perfectly formed, individual cups. Once your weaves are ready, place the baking sheet into a preheated oven and bake for approximately 15-20 minutes, or until the bacon reaches your preferred level of crispness. Everyone has their ideal bacon texture, so keep a close eye on them! Once baked, it’s essential to let the bacon cups cool on the muffin tins before attempting to remove them. This cooling period allows the bacon to firm up and retain its shape, preventing any breakage. One of the best aspects of these BLT Bacon Cups is their make-ahead potential! You can easily cook the bacon cups a day or two in advance. When you’re ready to serve, simply place them back on a baking sheet and warm them in a 350°F oven for about 10 minutes before proceeding with the delicious filling.

Assembling Your BLT Bacon Cups: Freshness Meets Flavor
With your perfectly golden and crispy bacon cups ready, the final step is to bring in the “L” and “T” of the BLT. This is where fresh, vibrant ingredients truly shine. Begin by finely chopping your favorite crisp lettuce – romaine or iceberg work wonderfully here for their refreshing crunch. In a separate bowl, gently toss the chopped lettuce with a generous dollop of mayonnaise. The amount of mayo is entirely up to your personal preference; some like it richly dressed, while others prefer just a light coating. Feel free to use your favorite brand of mayonnaise, or even a homemade version for an extra touch of gourmet.
Once your lettuce is beautifully coated, carefully spoon the dressed salad mixture into each cooled bacon cup, filling them generously but not overflowing. The contrast between the cool, crisp lettuce and the warm, savory bacon is truly delightful. To complete the classic BLT profile, top each cup with a few slices of sweet, juicy grape tomatoes. Their vibrant color and burst of flavor add the perfect finishing touch. The result is not just a meal, but a miniature work of art – an impressive appetizer that will undoubtedly be the star of any gathering, or a super awesome, light yet satisfying lunch option that breaks free from the mundane. I’ve personally made these for brunch on numerous occasions, and they are always met with rave reviews. They offer a refreshing and exciting alternative to the usual, often boring, salad options, proving that healthy and delicious can go hand in hand.

Variations and Serving Suggestions
While the classic BLT combination is undeniably perfect, these bacon cups are incredibly versatile. Consider adding a few thin slices of avocado for extra creaminess and healthy fats, or a sprinkle of fresh chives or green onions for a subtle oniony kick. A dash of black pepper or a pinch of red pepper flakes could also elevate the flavor profile. For those who enjoy a bit of cheese, a tiny sprinkle of grated Parmesan or crumbled feta could add another layer of savory goodness.
These BLT Bacon Cups are ideal for a wide range of occasions. Serve them as an elegant appetizer at your next dinner party, a fantastic option for game day get-togethers, or even a sophisticated addition to a holiday brunch spread. They make for a perfectly portioned, satisfying lunch that feels indulgent but fits perfectly into a low-carb or keto lifestyle. Their grab-and-go nature makes them excellent for meal prep, ensuring you have a delicious and healthy option ready throughout the week. Imagine packing these for a picnic or a light office lunch – they hold up beautifully and are far more exciting than a traditional salad.

Ingredients
- 15 strips of Bacon (preferably thin or regular cut for weaving)
- 7 cups Salad mix (crisp romaine or iceberg recommended)
- 10 Grape tomatoes (halved or quartered)
- 3 – 5 Tbsp Mayonnaise (adjust to taste)
- Optional: Freshly ground black pepper, chives, avocado slices
Instructions
-
Preheat your oven to 400°F (200°C).
-
For each bacon cup you intend to make, cut two strips of bacon in half, leaving one strip whole. You will need 3 strips of bacon per cup (2 halves, 1 whole).
-
Flip a standard-sized muffin tin upside down onto a large baking sheet. This inverted tin will serve as your mold for the bacon cups.
-
Lay two of the 1/2 strips of bacon vertically, draped over one of the inverted muffin tin mounds.
-
Take the remaining two 1/2 strips of bacon and weave them horizontally through the vertical pieces (over, then under).
-
Weave the whole strip of bacon around the outside of your mini weave, tucking it under and over each of the existing pieces to form a complete cup shape. Repeat for desired number of cups, leaving space between each cup on the muffin tin.
-
Place the baking sheet with the bacon cups into the preheated oven and bake for 20-25 minutes, or until the bacon reaches your desired level of crispness. Cooking times may vary based on bacon thickness and oven.
-
Once cooked, remove from the oven and allow the bacon cups to cool completely on the muffin tins before carefully removing them. This helps them retain their shape.
-
While the bacon cups cool, chop your salad mix into bite-sized pieces. In a bowl, toss the chopped salad mix with 3-5 tablespoons of mayonnaise, adjusting the amount to your preference for dressing coverage.
-
Carefully fill each cooled bacon cup with the dressed salad mix.
-
Top each filled bacon cup with several slices of grape tomato.
-
Serve immediately and enjoy your delicious, low-carb BLT Bacon Cups!
