It’s important to cool food quickly before refrigerating – ideally within two hours of cooking. For longer storage, freezing is an excellent option. Properly packaged, leftovers can be frozen for up to 2 to 6 months. Make sure to label containers with the date to keep track of freshness. When reheating, always ensure food reaches an internal temperature of 165°F (74°C) to eliminate harmful bacteria. Thawing frozen leftovers should be done in the refrigerator, under cold running water, or in the microwave, never at room temperature.
