The inspiration for this low-carb delight stemmed from classic cheeseburger soup recipes. While those are undeniably tasty, the idea of elevating a simple cheeseburger soup to the legendary status of a Big Mac was too tempting to resist. The combination of ingredients – the perfect balance of savory beef, the slight crunch of cabbage, and the essential tang of dill pickles – creates a symphony of flavors that truly mimics the beloved burger, all while being incredibly satisfying and low in carbohydrates.

Crafting Your Low Carb Big Mac Soup: A Step-by-Step Guide

Creating this flavorful soup in your Instant Pot is straightforward and quick, making it ideal for busy weeknights when you need a delicious meal on the table fast. Follow these simple steps for a perfect bowl every time:

  1. **Brown the Ground Beef:** Begin by setting your Instant Pot to the SAUTE function. Add your ground beef and stir frequently, breaking it up until it is thoroughly browned. Once cooked, press ‘Cancel’ to end the SAUTE function.
  2. **Drain the Grease:** Carefully drain any excess grease from the browned ground beef. This step is crucial for achieving a lighter, more flavorful soup without unnecessary oiliness. Return the beef to the Instant Pot liner.
  3. **Combine Main Ingredients:** To the ground beef, add your diced onion, celery, minced garlic, thinly sliced cabbage, diced dill pickle, Worcestershire sauce, and beef broth. These ingredients will simmer together to build the soup’s robust flavor base.
  4. **Pressure Cook:** Secure the Instant Pot lid and ensure the pressure release valve is set to the ‘Sealing’ position. Cook on HIGH PRESSURE for 10 minutes. This short cooking time allows the vegetables to soften perfectly while infusing the broth with their delicious essence.
  5. **Natural Release & Vent:** Once the cooking cycle is complete and the timer goes off, press ‘Cancel.’ Allow a Natural Release for 5 minutes. This helps to tenderize the ingredients further and prevents foam from spraying. After 5 minutes, carefully turn the pressure valve to ‘Venting’ to quick release any remaining pressure.
  6. **Add Creaminess & Cheese:** Remove the Instant Pot lid. Turn the SAUTE function back on. Stir in the heavy cream and American cheese, stirring continuously until the cheese has completely melted and the soup is wonderfully creamy and smooth.
  7. **Prepare the Special Sauce:** While the cheese is melting, in a small separate bowl, whisk together all the ingredients for your Big Mac special sauce. This tangy, savory sauce is the secret weapon that truly transforms this soup into a Big Mac experience.
  8. **Serve and Garnish:** Ladle the hot soup into bowls. For that authentic Big Mac touch, garnish with a sprinkle of sesame seeds and a generous drizzle of your freshly made special sauce. Enjoy immediately!

Understanding Your American Cheese: Quality Matters!

When we talk about American cheese in this recipe, it’s essential to clarify what kind we mean. Many people immediately picture those individually wrapped, processed slices often labeled as “cheese product.” **This is not the type of American cheese we recommend for this recipe.** For the best flavor and melting consistency, we highly encourage purchasing high-quality American cheese sliced fresh from the deli counter. This variety is made with real dairy and melts beautifully, creating a silky, luscious broth that elevates the entire soup. If you have any doubts, simply ask the deli attendant to see the ingredient label before making your purchase. The difference in taste and texture is truly noticeable and worth the extra step.

The marriage of the savory ground beef with the rich, cheesy broth is already a winner, and the delightful tang from the pickles provides that essential cheeseburger zing. While you could stop there and have a fantastic meal, for an authentic Big Mac experience, the special sauce is non-negotiable. It’s the secret ingredient that ties all the flavors together and elevates this soup from simply good to truly extraordinary.

The Legendary Big Mac Special Sauce: The Perfect Finishing Touch

Just like a dollop of sour cream brings out the best in Pressure Cooker Taco Soup, or a swirl of cream enhances a Fire Roasted Red Pepper Soup, a generous drizzle of homemade Big Mac Special Sauce is what truly makes this soup sing. This low-carb special sauce is remarkably easy to prepare and uses simple ingredients you likely already have in your pantry: mayonnaise, dill pickle relish, yellow mustard, white wine vinegar, paprika, onion powder, and garlic powder. It’s the real deal, perfectly capturing that signature creamy, tangy, and slightly sweet flavor profile that turns a simple cheeseburger into a Big Mac. Don’t skip this step – it’s the magical component that completes the transformation!

Meal Prep Made Easy: Freezing Low Carb Big Mac Soup

This delicious soup is not only perfect for a fresh meal but also excellent for meal prepping. You can easily make a larger batch and freeze portions for those busy days when cooking isn’t an option. To freeze, allow the soup to cool completely to room temperature. Then, transfer it to an airtight, freezer-safe container or, for space-saving convenience, into freezer bags. Lay freezer bags flat to freeze, then store vertically once solid. When you’re ready to enjoy, simply transfer the frozen soup to the refrigerator overnight to thaw. Reheat gently in a saucepan over medium-low heat on the stovetop, stirring occasionally until it’s warmed through. This makes for a convenient and satisfying meal whenever you need it!
