- 3 lb Beef chuck roast
- Salt and Pepper, to taste
- 2 tbsp Olive oil, divided
- 2 Dried guajillo peppers, soaked, stemmed, and seeded
- 2 Dried ancho peppers, soaked, stemmed, and seeded
- 7 oz Can chipotle in adobo sauce
- 4 cloves Garlic
- 1 tbsp Brown sugar
- 1 tsp Salt
- 1 tsp Dried oregano
- ½ tsp Ground cinnamon
- ¼ cup Pilsner beer (e.g., National Bohemian)
Beef Enchiladas
- 8 Mission® Super Soft Flour Tortillas
- 2 cups Shredded cheddar cheese
- Toppings such as diced tomatoes, green onions, queso blanco, and cilantro
Instructions
Beer Braised Beef Barbacoa
- Soak the dried guajillo peppers and ancho peppers in a bowl covered with water for 1 to 4 hours until softened.
- Preheat oven to 300°F (150°C).
- Season the beef chuck roast generously with salt and pepper.
- Add 1 tbsp of olive oil to a Dutch oven or large oven-proof pan with a lid. Heat oil over medium-high heat. Sear the seasoned beef for 2 minutes on each side until browned. Set the seared beef aside.
- In a blender, combine the softened guajillo peppers, ancho peppers, can of chipotle in adobo sauce, garlic cloves, brown sugar, 1 tsp salt, dried oregano, ground cinnamon, and Pilsner beer. Blend until completely smooth.
- Pour the blended sauce over the seared beef in the Dutch oven. Place the lid on and braise in the preheated oven for 2.5 hours, or until the beef is fork-tender.
- Carefully remove the beef from the pan and shred it using two forks.
- Remove 1 cup of the braising sauce and set it aside for assembling the enchiladas.
- Return the shredded beef to the Dutch oven and stir it into the remainder of the sauce, ensuring the beef is well coated.

- Preheat oven to 375°F (190°C).
