This week, as part of my self-care routine, I decided to bake these adorable and utterly delicious Mini Lemon Poppy Seed Donuts. Ever since I received a fantastic mini donut pan for Christmas, I’ve been somewhat obsessed with exploring various donut recipes, and these have quickly become one of my absolute favorites. The batter itself is incredibly simple to prepare, but I must admit, it took me a few tries to perfect the exact amount to pipe into each cavity of the donut pan. Once I mastered that technique, there was no stopping me! The satisfaction of seeing them puff up perfectly in the oven is truly rewarding.

To infuse these baked treats with an irresistible aroma and taste, I generously added fresh lemon zest directly into the donut batter. Ingredients

Donuts

  • 1 ¼ cup Cake flour, sifted
  • ½ cup Sugar
  • 1 ¼ teaspoon Baking powder
  • ¾ teaspoon Salt
  • ½ cup Buttermilk
  • 1 Egg, lightly beaten
  • 1 ½ Tbsp Butter, melted
  • 1/2 teaspoon Lemon zest

Glaze

  • 1/2 cup Confectioner’s sugar
  • 3-4 tablespoon Milk
  • 1/2 tablespoon Lemon zest
  • 1 tablespoon Poppy seeds

Instructions

Donuts

  • Preheat oven to 425°F (220°C).
  • Lightly spray a mini donut pan with non-stick cooking spray.
  • In a large mixing bowl, combine the sifted cake flour, sugar, baking powder, and salt. Whisk until well blended.
  • In a separate bowl, whisk together the buttermilk, lightly beaten egg, melted butter, and lemon zest. Add these wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix the batter.
  • Transfer the donut batter to a piping bag (or a ziplock bag with a corner snipped off). Pipe the batter into each donut cup, filling them approximately halfway.
  • Bake for 4-6 minutes, or until the tops of the donuts spring back gently when lightly touched.
  • Allow the donuts to cool in the pan for 5 minutes before carefully removing them and placing them on a wire rack to cool completely.
  • For the glaze, in a small bowl, combine the confectioner’s sugar and lemon zest. Slowly add the milk, one tablespoon at a time, stirring constantly until you achieve a smooth, pourable consistency (like a thick soup).
  • Once the donuts are completely cool, dip each one into the lemon glaze, allowing any excess to drip off. Immediately sprinkle with poppy seeds for garnish. Let the glaze set before serving.
