  • 1 pound Ground Beef
  • ½ cup Onion, diced
  • 3 tablespoons Taco seasoning, divided
  • ½ cup Water
  • 8 Flour Tortillas (8-inch)
  • 2 tablespoons Vegetable oil
  • 16 ounces Refried beans
  • 1 cup Enchilada Sauce
  • 2 cups Cheddar cheese, shredded
  • Your favorite toppings: fresh tomatoes, black olives, green onion, sour cream, etc.

Instructions

  1. In a skillet over medium-high heat, add ground beef and cook until it begins to brown.
  2. Add onions to skillet and continue to cook until meat is cooked through.
  3. Drain any excess grease from the meat and return to skillet before adding 2 tablespoons of taco seasoning and ¼ cup of water. Continue to cook, stirring together, until water cooks away. Set taco meat aside.
  4. Preheat oven to 400 degrees F.

  9. Place the baking sheet in the oven and bake for 5-7 minutes, until cheese is melted.
  10. Remove from the oven and top with your favorite fresh ingredients.
  11. Cut each pizza into 4 slices and serve.

Notes

Most likely only 2 Mexican Pizzas will fit side-by-side on your baking sheet, so you will have to bake these in batches, two at a time.
